"Coming Soon": Pancakes, matcha, and bowls are coming to *Karolinenstraße* in Nuremberg as an established restaurateur introduces a new concept. Following the sudden closure of *Australian Bar & Kitchen* after 12 years, Philiep Kaiser, Selina Müller, and Richard Karatay are determined to continue serving Nuremberg—but with a twist: instead of burgers and drinks, they are offering coffee and toast. Toward the end of the month, the trio plans to introduce „Wild Child“, a new brunch café, to the heart of Nuremberg. This was initially reported by NN.de.

Shortly before the closure of „Australian“ at the „Obstmarkt“ on Saturday, June 21, 2025, the heartbeat of the entrepreneurs pulses with particular strength -accompanied by a significant sense of farewell. "Yes, over the years we've built a large base of regular customers who are saddened by the closure, but also looking forward to our new projects," Philiep Kaiser and Richard Karatay tell us.

Just a few days later, following the closure, the opening of the new project by the creators of „Australian“ is set to begin: For in the week of June 23, „Wild Child“ is expected to take its first steps on „Karolinenstraße“ - under familiar guidance, as: "The team will be partially involved. Since we have more projects in various forms downtown, the team can further develop based on individual desires," both say. Selina Müller, Philiep Kaiser, and Richard Karaty will also be the leading figures in the new project: Kaiser as co-owner, Müller as operations manager. "Richi will continue to be the key figure in this project, having developed the new concept with Philiep through years of experience," they add.

And this concept is set to differ significantly from that of „Australian“ - as their new venture is a brunch café. "Nuremberg, are you ready? Brunch is about to change. Wild. Sweet. Savory. Healthy. "The current trend in the gastronomy sector shows that people prefer going out during the day, opting for coffee, juices, and lighter dishes instead of indulging in heavy alcohol consumption and late-night outings," report Kaiser and Karatay from experience. The name speaks for itself, as "the food and drink combinations follow international trends and have no culinary boundaries." This allows for a variety of combinations, "as if one were a wild child at the breakfast table."

Menus Change with Trendy Foods and Food Trends

In this spirit, a permanent core menu is planned, which will be updated with popular trend foods. Additionally, the restaurateurs promise "new crazy specials and combinations" from time to time. "Our observations show that the trend of exclusively vegan or vegetarian dishes is declining, and people are seeking a balanced, protein-rich diet, as well as new combinations they've never tried before." To achieve this, the entire team is working on a menu, "but in the future, our social media community will also be involved," stated Karatay and Kaiser.

The new venue aims to exude international flair and be "exciting for everyone." The exact day of the week around June 23rd when the new brunch café will open for the first time is not yet specified.
